It’s buttery, it’s sugary and most importantly – it’s melting in your mouth! You guessed right my friends, butter cookies are my all-time addiction and with this recipe… it’s about to become an addiction of yours as well.
- 200g white flour
- 60g wheat starch
- 230g butter (room temperature)
- 30g powdered sugar (and 40-50g for coating)
- 1 teaspoon Vanilla Extract
Cut the butter into cubes and bring to room temperature. Once you are ready, beat the butter with your mixer and once it’s creamy and fluffy, add half of the sugar and beat until it comes together. Make sure you scrap your bowl before you add the remaining sugar. Once you get a creamy mixture, add a teaspoon of vanilla extract. Mix the starch with the flour and add half, beat and scrap your bowl before you add the remaining flour and starch.
Refrigerate the dough for minimum of 1 hour, making sure it gets firm enough for you to be able to easily work with it. If it gets too firm, don’t worry, just leave it on the counter for a while to soften.
On a baking tray lay a parchment paper, no need grease it. With your hands or a spoon pick small parts of the dough and roll them into small balls. Press them very gently towards the tray just to make sure they stick well and they will not be moving around once you pick up the tray.
Bake in preheated oven on 180C for 10-15 minutes.
Once they are out of the oven, let them cool down.
These cookies are extremely soft so make sure you arrange them into cupcake cups. Coat generously with powdered sugar.
