Grinch Cake


Christmas is the loveliest, happiest holiday of the year! If you are wondering how to surprise your kids with a new homemade Christmas treat – you have reached the right recipe! This is a very easy recipe to make that will wow everyone you serve it to! And it’s soooo fluffy and delicious!


For the cake:

  • 4 eggs – large or 5 medium
  • 260g granulated sugar
  • 340g flour – well sifted
  • 250ml club soda – or sparkling water
  • 50ml oil – in our recipe we used grapeseed oil
  • 1 tbsp baking powder
  • 5g lemon zest – both packaged or fresh are suitable
  • A pinch of salt – we used Himalayan
  • 1 tbsp Vanilla Extract
  • Green dye

For the sugar glaze:

  • 225g powdered sugar – sifted
  • 30g butter
  • 250g condensed milk
  • Birthday cake sprinkles or any other sprinkles at hand



Start by mixing the eggs with the sugar until creamy. Add in the oil and mix well. Add half of the flour and mix. Mix in the lemon zest, baking powder and salt into the other half of the flour and add it into the batter. Once mixed well, slowly pour in the club soda into the batter. Add a tablespoon of Vanilla extract and the Grinch dye. Once well incorporated, pour it in a buttered cake pan with parchment paper. Bake in preheated oven on 180C for 50-55 minutes.

To prepare the glaze, sift the sugar and add the butter into it, beat until incorporated. Add half of the condensed milk and mix well. Add the other half. Beat until well incorporated and a fluffy cream is formed.

Once the cake is out of the oven let it cool. Take it out of the pan and place it on a tray. Pour the glaze over the cake and sprinkle with any decoration you like. Keep in mind that the cream will form a skin once it cools down.
