Blueberry Pie


If I can make pie, you can make pie too! This was the very first pie I have ever made in my entire life, and it was gone within minutes after it  was served! I have made a couple of small mistakes as a first attempt, but it turned out tasting wonderful!


For the pastry:

  • 425g white flour
  • 2 tablespoons icing sugar
  • 200g butter
  • 7-8 tablespoons cold water

For the filling:

  • 1 tablespoon lemon zest
  • ½ lemon juice
  • 1 teaspoon cinnamon
  • 15g flour
  • 130g granulated sugar

Baking time: 60 min

Bake in 180Cº preheated oven


Put 100ml water in the freezer a couple of minutes before you start. Sift your flour into a large bowl. Cut the butter into cubes. Add the to the flour and with your fingers start incorporating the butter into the flour. Once that comes together, you can start adding water. You must make sure your pastry does not fall apart, but should not be very sticky either. If it gets too sticky, dust with a very small amount of flour and incorporate. Once ready, place it in the fridge for about an hour.

In the meantime, you can prepare your filling. Rinse the blueberries and drain them very well. Add the sugar, flour and cinnamon along with the lemon juice and lemon zest into the blueberries. With a spatula, mix the ingredients together very gently in order to avoid damaging the fruits. And you are done!

When your pastry is ready, dust your rolling pin and start rolling. Make sure that the circle you make with the pastry will cover the baking pan completely along with the edges. Butter the pan before you place the pastry in. Cut the edges and make the leftovers into a dough to roll a circle to cover the pie with. Pour in the blueberries and add the remaining pastry on top.

Bake in preheated oven on 180Cº for about 1 hour.

Serve with Vanilla ice cream, or any kind of ice cream you love!
